if we assume evolution, they're grey because of their intense sunlight making light-permeable skin a non-survivable trait. their skin blocks light, while lusus skin reflects it. albinism on earth is extremely detrimental as it allows sunlight to penetrate much deeper than non albinistic skin
the lack of pigmentation causes albinos on earth to appear pinkish due to blood's color, so they would likely be lighter grey with clear undertones of their blood color - making them mutants and subject to immediate culling.
if not for immediate culling, they'd likely die as grubs if they ever set foot in the sunlight - which brings up a funny parallel with rainbow drinkers. i would depict their skin and hair as being their blood color but with a light overtone of grey. their eyes would be blood color from birth.
i ask because i have an albino fantroll and i've played around with its appearance a lot, i like to think its hair and the thinner parts of its skin would be transparent like a polar bear. i have gone back and forth between making its horns normally colored, pastel, and mostly white.
