As a reviewer I love lengthy and detailed rebuttals. It’s the one time I am actually discussing science (even more than conferences, which are more high-level). Am I the only one?

Me too, when the authors know what they’re going. But please let’s call them “responses”, not “rebuttals “.

I note that HotCRP calls it a "response", which is very important.

It's always been a "response" for me.
The only time it was a "rebuttal" was when I explicitly thanked Reviewers A, C, and D for their valuable feedback.

I'm in total agreement. I'm often saddened when the response is trying to be compact, and like line by line replies to comments.
I have really taken to viewing it like a review on a PR.
