First, I see that you've gone into the options and disabled Copilot. There's also a section in the privacy settings to disable all related settings.
I had to manage and update my Word 365 subscription to what they're now calling "365 Classic."

Meanwhile, might be an idea to ensure MS hasn't "upgraded" you from the "365 Personal Classic" to the "Personal" which is an extra $30/year.
Currently in the process of moving EVERYTHING OFF because even if it is disabled, I don't trust it not to be scraping.

I've been using Atlantis for my writing and I'm happy with it. I don't need more tech in my word processor, I'd prefer less.
There's no AI in the software itself though, to the best of my knowledge. I've been using it for a couple of years & it's fairly low-tech

I've tried them all and in the end of the day Word is both a complete overkill bad solutions which is less worse than the other solutions for me.
