I imagine adding a feature such as that would take so much data to keep track of that they don't want to risk overloading the site rn

While this site may look and function eerily similar it is not quiet the same.
Firstly searching posts with tags is a lot easier and doesn't hide posts or shadow ban for using them.
On top of this tags are a supporting factor for one of Bluesky's unique features being "Feeds"
For example lets take the "FNAF" feed. It essentially skims through posts tags like "#FNAF" in it and grabs any that have that tag recently made and puts it in the feed.
