and the rest of the basing, just drybrushing orange to highlight and shading with strong/flesh wash, which was also done to the bottom of the legs to help the model fit the base

they're simple, versatile and easy to convert since there's an abundance of parts. I don't like all of them, but I'm a sucker for a good old sci-fi space knight, which they sometimes lean into, especially black templars, they're not my favourite, but I like going back and making a few occassionally

In part, because I like knights in space. Space marines took over the design space where something more interesting could flourish.
Yeah I definitely wish there were more types of space knight models, I'm always hoping for more like secutarii, imperial knight troops and updated inquisition crusaders, and also kitbashing my own. I do think space marines get way too much attention, but I'll still occasionally pick up ones I like
And then, of course, there's matter of personal preference: I don't like "heroic scale".
To your point of ease of sourcing bits – human-sized figures have a lot more to pick from.
edge highlighted the armour with some grey, never feels like a lot of work, and it's satisfying to do, but I sometimes have trouble finding the balance of too much/too bright vs not enough to be that noticeable
