Start out with about 30 saltine crackers, crushed up in a 13x9 dish. Pour in a 1.5 sticks of melted butter and mix around, making a "crust". Sautė about 4 cups of onions with olive oil, salt and pepper. When they get brown, pour over crackers.
Mix up 4 eggs and heat up 1.5 cups of milk. When milk reaches about 160F (more or less), SLOWLY add into beaten eggs. Salt and pepper. Once mixture is incorporated, pour over onion and cheese mixture.
