Could add vegan cheese if you want a firmer texture
You gotta make a roux. Oil, herbs, mylk, rice flour (whisk rapidly). Then melt the vcheeze into the roux. You can then add caramelized onions, garlic and your choice of greens (peas, green beans, collards, kale, brocc)- then the pasta (Tinkyada bunnies lol)
Never baked it but: panko crust.
Second this, any Mac with a good roux as a base is 10000% better than other methods. I use unsweetened almond milk and regular bread flour for mine all the time and it works great 👍🏻
Oh yah, I prefer soy milk, but we used to use rice milk. Corn starch, potato starch, or tapioca powder would all probably work similar. My recipe is incidentally gluten free (bc my ex who came up with it was gluten free) but no one should buy anything wacky they don't have already in the cupboard.
Ofc but I do appreciate you saying it works with other starches and milk substitutes bc there are lots of allergies esp gluten and nuts that people may have to avoid in their alternatives
Thee Burger Dude has an instant mac n cheese recipe you can make. You make the cheese powder yourself and mix it with vegan butter and plant based milk. He has other mac n cheese recipes but i have not tried them yet

I make a vegetable cheese similar to this recipe.
I add Tofu Ricotta and store bought Chao.
Build your cheese sauce with that and your preferred plain milk alternative.
Make a breadcrumb and vegan parm topper blended with spices and bake that.
