thats ideal proofing formula, you can kinda make this happen in your oven if you dont have a proofer. throw a lil water in the bottom & turn it on for a 5mins. 90degrees inst that hot. but proofing w/ heating pad is more consistant, just wrap bowl in plastic
The best the I ever did was steal my parents convection/air fryer because it has a "ferment" option, it holds whatever temp you set it (90f by default) and it's damn amazing for proofing bread especially sourdough perfectly. You can make one with a box and heating pad but requires more monitoring.

first try I did not let it rise enough, came out tasty but no big bubbles, second attempt much better
