Induction is so much better. I use a portable induction while my gas stove sits idle. It heats just and fast and the control of the heat is key to so many foods. Gas get clogs easily and the heat is constantly inconsistent across the pan.
Induction is nearly 100% efficient like a microwave. Instant heat adjustments. But you are limited to magnetic pans that are induction compatible. Gas stoves are bad for your health due to toxic emissions.
