Had a great chat with the young sommelier/ bar person. They are infusing herbs, citrus & spices in tisanes & syrups to create the flavours - very much like the Italians do for amaros & digestifs. They made me a virgin old fashioned with a smoky note of good whisky & blood orange. Very nice.
