i wont know until i bake them but i think the issue with the crumb on my bread not coming out well is the dough hook that came with my old kitchenaid sucks, this fucker right here seems to be the ticket

my mixer is like 15+ years old, the dough hook that came with it is this kind of j-shaped one
the issue i seemed to have is that it just wouldn't really work terribly well, this aftermarket one i got seems much better, but i wont know until i am done proofing and baking my baguettes
i am not sure, the old one definitely didn't develop the gluten structure as well as this new one
like after 5 minutes of mixing my baguette dough has an excellent texture to it and now i understand what people mean when they say "you will know its kneaded enough by the feel"
