In the parks, there's not much.
MK: Chili or Chili-cheese fries @ Casey's; Breakfast sandwiches @ MS Bakery; Cream-cheese stuffed pretzel @ Lunching Pad (carb-y, but sooo good)
EPCOT: Ham & cheese croissant or Ham & cheese quiche @ Les Halles; Breakfast sandwiches @ Connections Cafe;

Most everything for Festival of the Arts should be snack credits as well, so if you want to explore that's a great way to find something different

Chicken skewers in EPCOT Morocco pavilion were great on my last trip. Can also use snack credit for an iced coffee or whatever drink at Starbucks and pay a few bucks for their protein packs, Sous vide eggs, etc.
