marinade: 1/2 cup water, 1/3 cup soy sauce, 1/3 cup mirin, 1 tspn sugar (you can also add chilli or garlic at this stage but i'm a purist. bring a pot of water and 1 tbspn white vinegar to boil, once boiling put eggs in COLD from FRIDGE for 6 minutes. start timer not from when eggs are first in but
once water with eggs in it has come back to a boil. once 6 minutes up, put eggs directly into ice water and put eggs and ice water in fridge for at least 2 hrs but honestly as long as possible, sometimes i do like 4 hr. peel eggs (this should be easy now) and put into marinade
