Forgejo is a fork worth looking at as well, it's maintained by Codeberg since Gitea is now maintained by a for-profit (if that is of concern)

This definitely sounds great but I'm always afraid of something happening to the backup, unless I had another location that mirrors said backup as well

Yup, any critical data on my NAS (including the repos) get pushed to an offsite (EU-hosted) data storage daily :)
