The patron saint of Lecce, Saint Oronzo, is honoured by naming a dish after him. Melanzanata di Sant’Oronzo – an aubergine (eggplant) bake with veal meatballs, hard-boiled eggs, and ham alternately layered between fried aubergine, tomato sauce, and mozzarella, and baked au gratin.
