Tbh, in my (Minnesotan) house, that's a 7-layer salad. So it's not like it's healthy. But it is something cold and fresh-tasting, versus canned, roasted, drowned in butter. I love things drowned in butter, but without balance it's a recipe to feel like crap later.

When I grew up, my mother created a veritable feast for t-day, Christmas and New Year’s Eve. The closest thing we ever got to a salad was a Jell-o salad. As my mother got older, my sister was finally able to get her to stop with the Jell-o. It was just getting to be a bit too much food.

Sam is incorrect. 50/50 Spring Mix / Spinach mix. Sliced pear. Gorgonzola. Toasted pecans. Balsamic dressing. So simple and so good ... and a perfect way to take up some room in your belly with fiber and healthiness so you don't overdo it on the heavy stuff during the meal.

I love a little salad. It lightens up all the heaviness. It needs to be a fancy seasonal salad maybe frisée or radicchio with maybe pears or apples, def cranberries. Goat cheese or blue cheese and walnuts or pecans.
