Mine is better: First, hunt down Seville oranges online, otherwise it won‘t taste right. Then boil the whole oranges until soft (about an hour) with the same amount of water. Scrape the flesh out with a spoon and cut the peel to taste. Throw peel back into cooking water.
Add double the amount of sugar (really) and boil. Squeeze flesh and pips with a cloth and add the gunk to the pan, that‘s your pectin. Add the juice of a lemon and boil until it sets, an hour or longer. The result is incredibly aromatic, and bitter.
Please note that marmalade with grapefruit and certain types of oranges should not be eaten if you are taking certain medications (BP medications,some statins etc.)
