That's a flawed and simplistic argument. Defending someone doesn't mean we agree with everything they say, but rather we recognize their humanity and right to make mistakes.
Especially these days, we're wary of folks' assumptions that the bad guy is Jewish if he has even a remotely Jewish-sounding name. A little too eager. And I've seen too many posts like this recently.
I say all of the above with no intention of diminishing your experience. I have many relatives who live/d with the constant reminder of their complicity in the Holocaust. I may not know how it feels as a Jew, but I understand the magnitude of the crimes committed and the hate that has plagued you.
Well, at least it explains why random Jewish people in New York would approach me on Fridays to ask if I had somewhere to eat dinner that night! When they’d ask if I was a “Mensch”, I wasn’t sure if they meant in the German sense or the Yiddish one.
A lot of the more identifiable Jewish surnames are of German origin and I feel the average person who is neither German nor Jewish might confuse the two, just as the people going off at the OP might not be able to tell the difference between a Senegalese, Congolese or Nigerian surname.

And I say this as someone who is Mexican/German and only recently discovered his Jewish roots. It’s okay not to know everything, provided we are willing to acknowledge that when corrected and try to learn.

His last name is Schulz not Schultz, and there are plenty of Jew with both of those last names. However, he isn’t one of them (thank G-d). Schulz (and Schultz) are German names that some Ashkenazi Jews have because of how Ashkenazim were forced to take European surnames.
Yeah, that’s partially why I don’t think Schultz is a Jewish surname. The surnames of the Ashkenazim tend to be similar to Native American surnames, just in German, either a combo of words related to nature, or a profession. Schultz is neither.
Like Mandelbaum, Bernstein, Rosenberg, Schwartzman, Fruchter, Fischer, Turkheimer, Metzger, mean Almondtree, Burning Stone, Roses mountain, Black man, Fruitseller, Fisher, From Turkheim, Butcher in German. Schultz doesnt fit in that category.
I honestly thought it was a short guy joke. Kdot is like 5 2 or something. 5 6 and under dudes heard this jokes all their lives. I would err on the side of innocent mistake in this case. Less people can tell a the difference than you’d think.
