First chaos: the jelly batter became gloopy and a bit separated. This was immediately after i added the sugar. Perhaps i dumped it too soon causing the temp spiking too low? Was it the cocoa powder? Candy making and baking is truly a chemistry-based sorcery.
Second chaos: left it for 2 days (had to stay over) and when I came back, the jellies were stuck on the rack??? So when I pulled them out they got grill marks 😭 at least the top part dried, i guess????
