Roasted pumpkin would be a creamy enhancement, so that seems legit (baked style in the US super creamy & often includes egg, like a custard). In our whare we make kimchi mac & cheese in the less enriched, side-dish style. I use my own kimchi for this.

My favourite version is with broccoli, so I'd definitely agree that's mac and cheese (because it has the proper mac and cheese sauce!). I recently did mac and cheese-ish, the sauce was very cheesy but included roasted celeriac.
