Anticheats require a lot of kernel-level APIs from the Windows kernel, which aren't present in the Linux kernel. Now, you could say "Can't wine implement these and interface them to the Linux kernel?" (which is what it does for user-mode syscalls) and probably, but even then, a lot of publishers
