Seeking cookbook recommendations to help me out of a cooking rut! I love vegetable-focused dishes, interesting soups or casseroles and am open to all types of cuisine! Italian and French tend to me a bit too gluten/dairy focused though, fwiw.

I started cooking through the Les Halles cookbook by Anthony Boudain. Mostly meat focused but some good veggie dishes in there as well. The ones I’ve made so far have minimal gluten and dairy.
Anything by America’s Test Kitchen. As a science nerd I love that their books read like a science paper: they don’t just give you a recipe, but they start by stating what they wanted to achieve and talk you through the things that didn’t work and what worked and how they arrived at the final recipe.
