I feel trapped between YouTube and Twitch. I stream four days a week, which doesn't leave much time to make videos. If I don't stream, subscriber count drops. if I don't make youtube videos, people unsubscribe.

I would say either focus on the one that makes you the happiest and accept that the other one will be less successfull, or if possible collab with others on YT like Dylan so they can take care of a chunck of the responsabilities!
In my opinion, I feel like your best option would be to lean more into streaming, stream the recordings of EVERYTHING and have someone cut that up for your let’s play channel.
I recommend just cutting your twitch time down a little bit less time on 1 day might open a bit more time for youtube stuff. but I don't really know.
This is a just a small suggestion, but maybe shorter videos (15 mins or less) on the main channel could help a little bit.
