Also I'm trying to recreate the bag I made. I haven't posted a picture yet, but it was made with a lot of half doubles which made it a pretty quick project, but now the bag doesn't really function well since it stretches too much.

Oh they're extremely useful, and there are so many things out there that would not function without them (almost all amigurumi projects). They're necessary for sure. I just personally don't enjoy how slow building it is if that makes sense. I prefer half doubles for the slight height difference.

That makes sense yeah ! I actually hadn't thought of the time aspect, but I understand better why it can be an annoying stitch. While I like the sc, it's definitely satisfying to see a project build up quickly in dc or hdc ! Now that I think abt it, I should use hdc more, it's a cool stitch !
