其实是参考omellete的做法,两个鸡蛋加一点水和盐打匀,锅里全程小火,化开黄油,蛋液倒进去用锅铲一直搅搅搅,一边搅一遍等鸡蛋慢慢凝固,不断搅动会让鸡蛋和普通的炒蛋凝固的过程不同,鸡蛋会慢慢地很均匀地失去流动性,等到像浓稠的酸奶一样的流动感的时候,利用锅的边缘塑形
