At that point the IP would be meaningless since the final product could be forked and possibly used against them via competition.

Development isn't cheap. There is a tight balance between what should be considered OS and what should remain proprietary.

The frontend of this app is fully open sourced. Yes anyone can fork it and emulate the backend but that also takes a lot of work. It’s less work just recreating it

But there still is a cost associated with the labor involved in creating the original application.

Developer time is not free, nor infinite.
