I took six weeks of Japanese cooking in chefs school. A chef came in from a nearby city to teach us. It was a wonderful experience.

Other than a few Japanese dishes I am comfortable enough to make without guidance, I’m a dabbler. I know some things is all, and am fine putting myself in the hands of those who know more.

Learning curve. He knows how to grill and I know how to smoke, but this is the first time we’ve used a Konro grill and binchotan. That, coupled with performing some very specific cuts to the bird, meant that we ate later than we typically might. Next time we’ll be faster. By summer, speedy.
