Linux has been used for pro audio/music work going back decades. Go look up Jaromil and his “dyne:bolic” distro. Also look up PulseAudio, JACK, PipeWire &c.
If it doesn't fulfill the basic "stick a random USB audio interface and it works with absolutely minimal latency and zero configuration as if by magic" requirement, it's not good enough. None of these are that.
It did, for me. I have a surround 7.1 USB interface, which did work with zero configuration. It just appeared in my list of audio sources and sinks, where I chose it to use.
