Not happy with Apple about this obviously but I’m laying the blame squarely at the feet of the UK government; faced with the choice, it was inevitable that Apple would throw UK users in the fire rather than dilute their global brand.

Large companies begin to challenge governments.
If the current course continues, the world will be run by Amazon, Musk, Apple and Alibaba and so forth. They will make the laws and rule the earth.
Do we really want that?
Frankly outraged and I haven't got any skin in this particular game having not owned any Apple products since I bought a second hand Apple II more than thirty years ago.
Capitulate to a government and compromise user data. Fashy option.
Refuse to cooperate until a court orders you to remove your software/hardware from UK market. Dumb option.
Protect global user data. The UK gov is left to blame for hurting its own. Least worst option.
Most users will see that, including in the UK, and side with Apple.
I've never bought Apple but they have my support.
Keep your own files and make sure you do regular backups (scheduled, ideally). Why is this not obvious?
I backup on two other devices, and once in a while take an encrypted SSD out of the house just in case of the worst.
Yes I'm feeling a bit smug at the moment, but I guess I'm entitled to that.
All my photos are locally stored. One has to turn off cloud backup in the photo app (on android, anyway) but it's easy enough.
