Here's my go to corn chowder soup:
2 cans creamed corn
1 1/2 can worth of water
1 tsp spoon salt
1 tsp boullion
2 tsp sugar
1/2 can half and half
1 tbsp butter
Lots of black pepper
Blend smooth or to desired texture, top with green onion.

The base is just creamed corn and a liquid blended.
Coconut cream is a good substitute too. This can easily be adapted for vegans.
But at its base its warming, mildly savory and sweet, and quite filling.
