The hand tracking on AV looks pretty good. Your example has me thinking about the possibility of direct transformation with malleable substances such as clay. Perhaps it has been done already.

Actually, these demos are not using hand tracking, which can only be used in immersive spaces with permission from the user. These are using the system-provided gestures and can be used without those limitations. I'll do some hand tracking examples soon though
