I think one of the shittiest things we ever did in food was convince people to pay such high prices for so little work.

I understand sometimes there is a need (disability, mass production etc) and the option should be available, but it's basically become the price gouge default. Sometimes I'll go 2-3 weeks not buying pork because they don't have a loin in stock and I'm not paying double for someone to pre cut it.

I agree with the disability thing, for sure. The amount more they charge though. I can cut a whole chicken into pieces in 8 moves. you can bone it completely in another 8. Takes a little bit of practice, it's not like we don't have years to learn.

I was fortunate that Mom worked in food service and taught me. I know sooooo many folks that their entire cooking knowledge is "here's how to microwave something, or boil water"

No knife skills
No understanding of safe temps or handling
Seasoning? Don't even know what that is.
