No temp was fine. Ran at 250. Like I was telling @thisgrilllife.bsky.social it was shrinking up weird. I’m not sure why it did what it did, but I bet I’ll never buy a grass fed brisket again lol

1000%! Which is why I had diced it and put it in a bag. We had brisket quesadillas last night. Will be having chili later this week too
