What's the point? You can't make a deal when one side can and does cancel agreements arbitrarily. Better to spend one's limited time and attention with countries that will stick to their side of any deal.

Think about the US position with regard to the UK. Lots of their politicians have wanted a deal, but to include the likes of food standards. The UK may have offered something on tech. Does Trump care about either? We simply don't know.

If Trump just wants to announce lots of tariffs because whatever then he might not be that bothered about deals. If he does care about deals he won't want to let the UK off lightly. And of course the UK doesn't really want to look desperate for a deal.
