My totally non scientific experience here is that this is extremely sensitive to both the type and brand of plant milk - I take oat milk in my tea and one store's brand will split faster than a baptist church, where others are fine.

Makes good sense - it's all about the recipe. And oat vs pea vs whey - very different proteins. Temperature sensitivity too, perhaps.

I find Morrisons' oat milk, and Oatly, both do something fierce. Waitrose own brand and glebe farm are fine. No idea what the difference is.

The difference - the ingredients perhaps - and maybe some nasty, nasty superpowered xenobiotic UPF emulsifiers! Or maybe a natural one that works beautifully.

oh, almost certainly some sort of emulsifier. Yes i know UPFs are probably going to kill me, but the results of having cows milk and/or the consequences of acute malnutrition are probably going to get me first.

My experience was that temperature is a key factor. If the coffee or tea is too hot, it is more likely to split
