plates and plate carriers are heavy, are more or less only used at ranges or airsoft fields for 99% of people (and 0.5% crossfit geeks), you can't conceal them, you can't daily have one on you like you can with a pistol, and a pistol can be deployed from concealment much faster than a plate carrier.

Truth and a half. Way too many people get into this trying to play soldier by looking the last, i instead of focusing on the most fundamental aspect of self defense: knowing how to protect yourself.

And that's a gun you're well practiced with before all else.
