If you can get your hands on kiawe wood, smoke/ cook it using that with a Hawaiian teriyaki glaze (marinade maybe) smoked Hawaiian teriyaki salmon FTW!

If you can’t get kiawe, use a mix of applewood and mesquite, heavier on applewood, kiawe is mesquite’s more polite and quiet cousin.

Ill use cedar for this. Its easy to get and traditional for west coast salmon cooking.
