I would never encourage anyone to take risks, but I ran a Windows 7 machine for some specific things for two years after EOL without a single issue. It even got regular updates to Windows security software.
I'm sure you overestimate the issue at hand. Millions of machines will still have win10 (and older), a lot of them are in police, medicine, and corporations, which can't be upgraded per your wish. Are you saying they would instantly be botnetted?
All I'm saying is, if it would be so easy, it would already be done. Maybe the whole internet would crash, maybe big corpos would get hacked already. We don't see it happening.
much like vaccines protect people from mumps and measles, security patches do this for electronics. unlike the human body, computers don't really have helper T-Cells for dynamic protection. those are security engineers developing security patches.
My 2019 windows 10 desktop did an overnight update a couple of weeks ago and when I restarted my computer later that day I got the blue screen of death
Do you not do periodic back-ups of your data onto an external hard drive or a suitable sized flash drive? You may lose your settings but at least your data will be retrievable.

I don't use Windows but I hear it's likely MS will provide paid-for updates for W10 to keep it safe for a while longer - and that W11 is likely to go first with the arrival of W12.
