1/2 Perhaps the 4th most difficult thing this month (plz don't make me list the top 3) is that my new studio apt doesn't have a built-in oven. Relying on an underpowered 2-burner cook top and a mid-size toaster oven which doesn't hold normal-size baking projects.

Focaccia is basically oven-fried bread, so likely delicious to fry pieces of the dough in a cast iron skillet, using no more oil than most focaccia recipes call for.
I'll be baking it in 2 loaves, one at a time, but if this works Baking Boss is back!
Even though it's not around the corner, can you tell me what brand/kind you have and whether you like it?
