conventional dairies where the milk is destined for Pasteurization there is no incentive to keep poop, straw, etc out of milk.. also then Mastitis (infection of teat/udder) is not an issue

their cows arent treated like individuals & kept healthy

We benefit from Lacto-fermenting beneficial bacteria

live Lactobacillus and other lactofermenters help digestion but also populate your gut and create conditions for other beneficials by outcompeting pathogen/negactive bacteria

proteins are crosslinked/denatured, fat miceilles disrupted and more during pasteurization, also giving absorption issues

there are a few less studied/limitaed evidence things too like intact bovine immunoglobulins working with or triggerring our immune system

i think cows are constantly sampling the local dirt microbiota/pathogens & building antibodies which then give us broader immunity without direct exposure
