Since I'm not making a whole turkey, I am making cheater gravy.
Drippings from the pan ,1/4 cup of flour, make a roux, once I get a nice golden brown color, 5 cups of Turkey stock , salt and pepper, add a bit of cornstarch if it's thin.
Add some carrots and onions for some depth and sweetness.
A little sage if you like it.
You can strain them out before serving or put the gravy in a blender to incorporate them.
