Ramen has its roots in Japan's Chinese immigrant community starting in 1859 with the advent of "Chuka soba." Chinese noodle soup that was adapted to the Japanese palate.

But ramen as we come to know it today was birthed from post-war American occupation and the subsidies that came with it.⬇️⬇️⬇️

After WWII, when Japan surrendered and the American military stepped in. They brought with them a surplus of wheat flour with the hilariously foreign impression that the Japanese would "bake bread" with it.⬇️⬇️⬇️

Well, guess what? Ovens in Japan were a rarity at the time. As a result, a black market for ramen developed and numerous yatai sprung up out of post-war recovery.⬇️⬇️⬇️

Producing ramen was very low-cost because wheat flour was plentiful and broth was made from inexpensive animal parts that many westerners would never consider using.

From that recovery, ramen ascended into an art form. ⬇️⬇️⬇️
