I fold the duvet back to the bottom of the bed and put the pillows there too. And the towels are put all together so they don't have to ferret around to collect them. Like to leave the room as tidy as possible and making as little work for the housekeeping staff.
You’re mad. You want to help housekeeping? Put your rubbish in the bin and leave a tip. Don’t strip the bed, that’s just as mad. The maid will have to check each piece of linen for damage. You are not saving any time.
It depends how many bags I have to repack. Would usually at least make sure no bedding on floor so I don't trip or lose items in it. With multiple bags, would tend to remake the bed to ensure nothing gets lost in the covers as I pack.
I strip the sheets & put all dirty linens & towels in a pile on the bathroom floor. It saves steps for the housekeepers. Leave cash in the room for a tip.

Don’t make the bed. But I go the opposite way. I strip the bedsheets, fold the duvet up and leave it all neatly in a pile.
