Essentially it is to split the left and right. Each ear has a mic that captures what each would hear so when you listen back on headphones it's a near perfect capture of the direction and distance of sound. I'm making a horror game so subtle breathing on the back of your neck is very convincing.
Can't speak for OP, but my use-case for something like this would be to capture audio how we normally hear it. For example, a door closing will sound slightly different to each ear. Most devs treat it as mono, but it really isn't due to room reflection.
