I love my Cosori Pro II, it’s big, no need to preheat, easy to clean. I think most of them are good, but don’t get the bigger ones that look like toaster ovens; they don’t work as well.
It's a lot, but it has basically replaced our regular oven. It has enough room to cook on two levels at once and is a real workhorse. You can fit a whole chicken in it!
I have two breville models and use them more than my oven. They are easier to access (countertop vs low oven) and preheat faster than a full size oven. I basically never use the big oven unless the thing I'm making is too big.
If you are open to second hand check FB marketplace. I picked up a that spare for $40. This way you can try it and see if it serves you without laying out the $300.

The Double Stack XL model is the one I have. Space-saving but flexible with the two separate drawers. Highly recommended 😊
