When I taught English to elementary schoolers in Japan, we did an activity of having them say different fruits, vegetables, etc. For desserts, "baumkuchen" was one of the first things the kids said, and I had never heard of it before. Funny to see what specific things catch on around the world.
From my memory I'd call it dense, with a firm and moist texture, mellow flavor. I only ever had prepacked slices though—I imagine ones from a bakery would taste better, and come in a variety of flavors (like the ones mentioned in the article).

But later I saw pieces of it being sold at convenience stores. It just tasted like vanilla cake to me, but heavier. Tasty stuff, regardless.
