Just ugh that you have to turn on restrictions to access this. Wondering how much it got of the stuff I put on here before the update. Now I need to know if other profiles on the same device start needing to be neutered when the updated OS is first run, or when the profile is first loaded afterward.

If you have a device that CAN run Apple Intelligence you need to turn this off as well as the general Apple Intelligence setting.
Settings > Screen Time > scroll down to Content and Privacy > turn on Restrictions > Intelligence and Siri > turn off the first three options
