Mounts were the best part of Path of Fire. It felt really good to control and use them.
Skyscale is the most versatile one (as well as the hardest one to get, though they made it easier).
Every mount has completely unique movement abilities/acceleration/turn speed/etc and are part of the endgame progression system (Account-wide Metroidvania upgrades)
Making the game play like a more actiony XIV is doable using Steam Input configs, there are even some uploaded templates like that
I really enjoy the gryphon/skyscale dynamic. Gryphons are good for distance but not as good at verticality, whereas the skyscale is great for getting up and over obstacles. (Though if I could, I'd be in the siege turtle all day every day)
I highly recommend grabbing the radial mount mod. It takes a bit of setting up, but once you have multiple mounts it basically became mandatory for hotswapping between them without having to take up my entire keyboard in mount specific keybinds.
Honestly thought you'd have picked Asura, but the horizontal gear progression is just one place where this game shines. Mounts are definitely the best part though

Setting up controller for it takes a bit of tweaking but it’s worthwhile and viable
