That's a similar experience to what I've had gaming with my kids, although I am probably guilty of determining their role more than I should, but with games like Overcooked they get frustrated fairly easily.
I wish there was an easier mode on Overcooked. We have had the most fun with Stretchers.

that's the problem of roblox basically being a youtube style umbrella of games- everyone's experience is so different that it's hard to form a coherent idea of it

Yeah. I totally get that. Just from my experience the kinds of horror stories I’ve read about have never been recommended by the game and I or my kid wouldn’t even know where to look for that kind of content. If the strange disturbing stuff is being recommended then I wonder what they’re playing

I’ve felt fortunate that none of my kids friends have been Roblox people. Haven’t had to really breach this one YET.
