Haha, I just hope it's not gonna end up like my homemade kimchi attempt (which I ended up throwing away π ).
I just used the easiest mix of what I found from online recipes: orange, onion, garlic, dried ceyane peppers, rosemary, ginger, turmeric, cloves, cinnamon, lemon and apple cider vinegar
Also- I'm too long format for tiny word count. π
Yours sounds similar to the one I first started with. It should be milder bc you have several things in it to make it a bit sweeter.

Gotcha! Ok.I've been tweaking my recipe over the past year or so. I use a few different ingredients than you ( sometimes I just switch out stuff I don't have for stuff I do w/ the same properties). Main difference is I skipped the cloves and cinni and used jalapeΓ±o.
